Beast and Butterflies - 2022 @ 90 Robertson Quay

0 comments

Not a stranger to this place, read more from this post. Went back there in May 2022 with Tracy, Hence and Ivan. Our visit was more memorable as Fiona really made sure we had a good time there. Thank you!

It is quite obvious that my favourites there are the Hokkien Mee and Pork Knuckles. This time round, I wanted to try the lamb rack, so we got that too. Also took the chance to enjoy their weekend 2 hours free-flow cocktail with top-up of $25++. You could select the Mimosa, Aperol or Sangria. I tried the Sangria and I do agree with Fiona that the concoction is delicious!

Claypot Hokkien Mee @$14

Crispy Pork Knuckle @$22 (half portion)

Is it just me or the portion of the pork knuckles seemed to have decreased? Hahaa, I think I could do a full portion next time! Crackly skin and moist meat. Hokkien mee is as flavourful as I remembered it albeit it had lesser crispy pork lard but I am sure if you request for more, it will likely be acceded.

Lamb Rack (300gm) @$48

Lamb Rack was the most expensive item but it was pretty good and we liked it for its succulent texture. Well seasoned too, so each bite was precious. No additional sauce was required.

We were kept happy with our cocktail. Mood was light and jovial with a touch of sweetness, and Fiona did check on us to see if there's anything else that we needed.

Sangria

Of course, we ended our meal with dessert. Not just one or two, but four!

(from left to right) Molten Chocolate Cake, Apple Pie, Lemon Tart

Pandan Panna Cotta @$12

The Pandan Panna Cotta has that distinctive pandan fragrance and the rich sweetness from the gula melaka sauce. It was wobbly and not too dense.

The Molten Chocolate Cake, I just love digging into all the chocolatey gooey goodness for that decadent bite.

Molten Chocolate Cake @$17

For the apple pie, I liked the version here because it is not too sweet. Lovely to enjoy by yourself or with friends.

Apple Pie @$10

The lemon tart was lovely too with some tart/tangy/sweetness from the lemon flavours and to be honest, I think you can find something that you will like.

Lemon Tart @$8

Thank you Tracy, Hence and Ivan for the birthday treat. Am glad to have all of you in my life to enjoy the delicious food and our adventurous impromptu travels.

Special shoutout to Fiona and team at Beast and Butterflies.

[Tasting] Your Perfect Christmas @ Beast & Butterflies M Social Hotel Singapore

0 comments

Looking forward to festive eats with your loved ones? Come on down to Beast & Butterflies M Social Hotel Singapore and indulge in their Festive Dinner Set Menu, specially curated for this holiday season by Chef Bryce Li. Glad that there's wine pairing option too, and with just a $10++ difference, I'd like to think that the one with 3 glasses of wine, would be better choice as compared to just one glass. But of course, up to you to decide for, let us eat, drink and be jolly!

wine pairing for the Festive Dinner Set Menu

To start, we had the Castellblanc Cava Brut, a Spanish organic sparkling wine (cava) which tasted refreshing and slightly sweet with flavours of citrus, melon and peach.

Castellblanc Cava Organic Brut

For food, we sampled dishes from the 3-Course Festive Dinner Set as well as the Vegan offerings.

Was impressed by the Salmon Ceviche (the first dish from the 3-Course Festive Dinner) which by now has become my favourite salad. Loaded with ingredients that are not only nutritious, it also gave the much required textural contrast plus wholesomely flavourful! Wow.

Salmon Ceviche with Avocado, Dutch Cucumber, Cilantro and Seasalt

so good

Next dish, if you didn't say, I wouldn't know that it is not chicken. At least not visually. A rather impressive and memorable main course from the 3-Course Vegan Festive Dinner Set.

Braised NoChicken Chunks with Grilled Capsicums in Mushroom Tofu Cream, Parsley Mint Quinoa

close-up on NoChicken

Read more about NoChicken here. I think food innovations have come a long way. and happy to see the products out there today. More options, hence why not? Of course, Chef Bryce has transformed this NoChicken into a delicious dish that many in my party, just could not resist taking one bite after the other. Make sure that you have it while it is still hot!

The team here also does very good tasty quinoa dishes at Beast & Butterflies. I've never thought I'd be saying this (with me being a meatatarian and all) but the quinoa dishes here are really really good. Try it, and let me know your thoughts!

The wine paired with the Braised NoChicken would be the Tasca Regaleali Bianco, a southern Italian white wine made from the grecanico grape variant.

Tasca Regaleali Bianco Sicilia

Regaleali Bianco Sicilia has a Vivino rating of 3.7 and easy to drink. It has hints of pear, apple, subtle mineral and pairs well with vegetarian food too.

Another main course option in the Vegan Festive Dinner menu, is the Chargrilled NoBeef Patties.

Char-Grilled NoBeef Patties with Scallion Mashed Potatoes, Sautéed Brussels Sprouts with Smoked Vegetarian Bacon, Black Pepper Sauce

Beast & Butterflies Revisited @ M Social Hotel

0 comments

Good food, good places are meant to be shared. Brought some friends over to chill at Beast & Butterflies over a weekend. Helmed by M Social Singapore Executive Chef Bryce Li, I couldn't wait to try again Beast & Butterflies signature dishes, which by now had become my favourites there. As usual with any recommendations to friends, I looked forward to their candid feedback.

Doing away from hardcopy/physical menu, we were advised to scan the menu QR code that's found on each table top. To order, just notify the staff and they'd be there to input the orders into the tablet device.

Started with a glass of Merlot which came in a chilled glass.

Pierre Jean Merlot @$8++

For munchies, let's have some truffle fries while waiting for the rest to arrive. Piping hot chunky fries perfumed with truffle oil and with a sprinkling of cheese. More cheese would be good!

Truffle Fries @$12++

For mains, we ordered Hokkien Noodle, Pork Knuckles and Barramundi en Papilotte first since half of the group had just devoured a large plate of fries.

The Hokkien Noodle is served in a claypot and portion size is good for one pax as main course. Served with plenty of crispy pork lard and with the noodles covered under adequate yummy broth. The belachan chili provided the spicy kick to electrify the taste buds even further.

Hokkien Noodle @$14++

Having the Hokkien Noodle after sipping half a glass of wine, was very comforting and ready for more!

The paper-wrapped Barramundi arrived looking rather pale and served with a side. We had grilled asparagus in gorgeous green.

Barramundi en Papilotte @$22++

The fish was really good. Cooked just right and with collageny skin! The seasoning was mild yet adequate and allowed the natural flavours of fresh fish to shine through. I think I'll add this to my favourite list too!

For the finale, the dish that we came for; Pork Knuckles! Did a full portion and boy, it looked so good!

Pork Knuckles @$36++ (Full)

can you feel the crispy?

Next, our taste test. The skin. Did it crackled with sound on? Yes! Next, lean meat taste test. Happy to report that even the leanest part was not dried out. Fatty portion test. Wow, lovely feels when the fats and its associated meaty portion seemed to just melt away. Good! We liked it with the namjin sauce. Was it me, or was the sauce enhanced with a slightly spicier kick? Even the Asian sauerkraut seemed tastier now.

And, though at least the two of us were feeling rather full at this stage, it didn't stop us from ordering half a roasted spring chicken. Again, the dish arrived, looking gorgeous.

Spring Chicken with Black Pepper Jus and a side of mushrooms @$18++ (half)

And as part of the "Sweeter with Millennium" promo (ending in Nov 2020), we got a one-time use return voucher that can be redeemed from Beast and Butterflies, Café 2000, or The Orchard Café. For Beast & Butterflies, the voucher will be for complimentary sparkling wine for 2.

It was a satisfying meal and am glad that my friends enjoyed it too. Thank you and compliments to the Chef and team Beast & Butterflies.

Pre-order now to avoid disappointment! Visit http://bit.ly/mss-takeaway or please call/ WhatsApp 9183 9420.

Loved that the promo menu consists of all-time favourite such as the Half Crispy Pork Knuckle! This had gotten me really excited as Starter + Pork Knuckle for just $25+ ? No way! But it really is true, so don't miss this!

Courtesy of Gilbert and friends at M Social Beast and Butterflies, I have had the good fortune to taste the new dishes in the menu. To start, we had the Nicoise Salad and Quinoa Tabbouleh.  I really had no clue to what's a Tabbouleh except that it sounded darn healthy! Actually, it is a healthier choice. Originated from the Middle East, it is a vegetarian salad.

Quinoa Tabbouleh تبولة‎ (UP $14+)

Am most surprised by the portion of this item. Indicated as a Starter, but boy... the portion is like a main course on its own. Wow!

The Quinoa Tabbouleh has a lovely balanced flavours and visually, it looked like a beautiful garden. It made me happy to be eating something as colourful as this!

If you're afraid that quinoa might be a tad too filling, then Nicoise Salad would be a lighter healthy starter. There's mesclun, french beans, quail eggs, tuna chunks, cherry tomatoes, white anchovies and idaho potatoes with basil oil dressing.

Nicoise Salad (UP $16+)

As for the mains, we got to try the Parma Ham and Burrata Cheese Tartine, and Kurobuta Claypot Rice.

Get ready with a glass of wine, and sink your teeth into the fully loaded Parma Ham & Burrata Cheese Tartine. Chew and savour the flavours. Perfect with a sip of crisp white wine and a little tête-à-tête.

Parma Ham and Burrata Cheese Tartine

You must be wondering, what is this Kurobuta Claypot Rice? Let me show you...

Kurobuta Claypot Rice (UP $18+)

It looked like an indulgent version of "lu rou fan" (卤肉饭). The container was pretty deep, and the amount of rice would be enough to feed more than 1 pax. There were condiments provided, in case one would like to break the richness of the dish.

luscious runny yolk

Gave it a good stir and mixed it well. The braised sauce was superb and wished there were more. The rice towards the bottom were missing out on the sauce! Will recommend to heat up this dish before digging in. If you are expecting wok-hei from this dish, don't. I know I did as the "Claypot" in its name gave that sort of expectation. Nevertheless, it was a hearty and enjoyable rice dish!

[Tasting] Beasts & Butterflies @ MSocial Singapore

0 comments
Was there for lunch during the first visit, and now back for a taste of their dinner menu that was just launched in September.

"What would you like to drink?"  To this, I'd say M Wine, please. Yes, I really like the Millennium Hotels and Resorts private label wine collection. Mellow, light and easy to drink. It pairs well with almost anything. My choice for dinner? Always red.

M Wine @$12++

Let's get on with the meal, shall we? To start proper, we had soup. The incredibly sweet, pumpkin puree soup. Took a sip and immediately, there was a noticeable difference. The visuals would be of any other pumpkin puree soup but it had a refreshing taste due to the clever infusion of lemongrass. It has a smooth mouthfeel and that's probably due to the use of young onion oil in there. Good to share the soup with your partner.

Pumpkin Puree Soup @$14++

Next up, something light to whet the appetite (no, not salad). We tried the steamed clam chorizo, a favourite of JC. Our table likes this dish and one could mop up the sauce with the sourdough slices provided. I'm not a fan of chorizo, unfortunately. Granted, the clams were meaty but do watch out for the shell bits.

Steamed Clam Chorizo @$26++

If you are out on a date and had sudden cravings for chili crab but the thought of working through the shells and making a mess with your hands doesn't appeal to both of you, then at Beasts, they have a solution for you. Delicious chili crabs with chunky meats, and deshelled so that we can eat it prettily. Yes, served with deep fried mantou (but just 4 of it!). You could also request for steamed mantou, for healthier choice. But, where's the joy without the deep fried crispy on the outside but soft pillowy sweet on the inside mantous?

Chili Crab @$36++

The sauce was sweet and spicy, with spice level at Level 3 out of 5. Lovely, and we scooped up the sauce to drink, I meant to eat.

Next, there were burgers on our table. Cajun Chicken Burger and Impossible Burger. The burger was served with a side of mesclun and potato fries. The salad was dressed in the appetising goma sauce.

(front, back) Cajun Chicken Burger @$24++ and Impossible™ Burger @$27++

Loved that they used brioche buns (well buttered, is a must!) to sandwich the patty. The Cajun Chicken burger uses chicken thigh, so it was juicy. It was less enjoyable for me due to the existence of a herb that I didn't fancy on the chicken.

First time trying the Impossible™ burger and didn't know what to expect. Would the texture be weird? Would it taste beefy? Would the patty be dry as a cardboard?

Wild thoughts and it all disappeared on first bite.

Wow. It tasted...like a good beef burger.

It's been 5 years since I first came across Impossible Foods way back in 2014 during the Techcracker  2014 event, organized by the Li Ka Shing foundation, Horizons Ventures, NUS Enterprise and Vertex Ventures Holdings Ltd. Here is a related article on Li Ka Shing and Impossible Foods Inc founder, Patrick Brown.

The secret to the beefy taste? Here is a research article off the web for your reading pleasure: https://singularityhub.com/2019/04/19/what-makes-the-impossible-burger-look-and-taste-like-real-beef/

The Impossible™ burger patty is plant-based and at Beasts & Butterflies, the burger is jazzed up with sautéed baby spinach, white button mushroom, melty cheddar cheese, and tomato slice.

hey, good looking
sure this is not beef?

Next up, we are going to have meat. Yes, the real things. Duck, Chicken, Lamb and Pork. Essentially, those but let's do it with fancier flair~

Cassoulet Duck Confit @$35++

French cuisine, where the duck leg was cured and sous-vide cassoulet with cannellini beans, tomato concasse, spicy sausage and pork bacon. Chef Shahnaaz said, the cured duck leg was similar to 臘鴨.

My favourite roast that night, was actually the Roasted Baby Chicken where the cornish spring chicken was brined, pat dried and cooked with roasted butter herb marinated injected right beneath its skin, and served with sides of baby potatoes and spring vegetables.

Roasted Baby Chicken @$28++

It's rare to say but I liked even the breast meat of the Roasted Baby Chicken dish. A well-cooked dish that tasted good. This was one dish that made me wanted to finish it all. By myself. And, with sips of the delicious M Wine.

The Lamb Shank here was well braised in red wine (classic French style) and served with sides of mashed potatoes and ratatouille. I only ate a few pieces before it was gone. But those mouthfuls were good. Flavourful, meat was tender and clean tasting (aka not gamey at all) and thoroughly enjoyable. Didn't care much for the vege though but loved the soft creamy mash.

Lamb Shank @$38++

If you're still hankering after more meat, there's Pork Knuckles to consider. We did half-portion and it arrived looking crackly. Is it me, or does the namjin sauce tasted much spicier than previous? Get the meat that has some fats and of course a good portion of cracklings. Dip swiftly into the namjin sauce and enjoy the sensation on first bite. I still like this.

Crispy Pork Knuckles (half) @$26++

If you like Teochew porridge, or fish soup where the grainy rice is added to the soup, you will like the Lobster Porridge at Beasts & Butterflies. A luxurious pot of lobster rice porridge in crab broth, with sweet baby abalone, crispy conpoy, some bonito flakes, fried shredded ginger and scallion thrown in.

Lobster Porridge @$38++

Once in a while, Chef Shahnaaz Wong, Executive Chef of Beast & Butterflies, came to interact with us. She recounted about her time in Sri Lanka and the inspiration it gave in the pumpkin puree soup dish. A passionate and creative individual who loves travelling, Chef Shahnaaz has curated a small but multi-faceted, multi-dimensional menu to cater to a variety of palates.

Chef Shahnaaz spotted the camera

Thus far, my favourites from Beasts & Butterflies are Roasted Baby Chicken, Chili Crab, Lamb Shank, Impossible Burger, Pork Knuckles, Hokkien Mee, salads (didn't think I'd say this!), and crab patties.

Let's have some dessert before we call it a night.

Yam Brulee @$12++
closer view

The Yam Brulee was 'yammy' with gingko nuts and candied pumpkin, served with coconut ice-cream. I've enjoyed this the previous time but it's a 'heavy' dessert after a heavy meal hence, was feeling it at that moment.

The Purple Sweet Potato Montblanc was pretty in purple. Didn't read the menu carefully, and was a tad surprised when its inside was coconut gelato. Hahaaa. I wanted cake actually. But, it was a happy dessert with pretty details like the gold flakes and the chocolate butterflies. The pearl bursts excitedly and it was a sweet sensation having this dessert. Gelato was refreshing as expected.

Purple Sweet Potato Mont Blanc @$12++

We were filled with some trepidation while waiting for the finale dessert; the Rojak Ice-Cream Toast. We were like What did we order?! What have we done!

And, it arrived looking like.... a large portion of shibuya toast.

Rojak Ice-Cream Toast @$12++ (half)

We ate it like we were analyzing it deeply. It tasted pretty much as it sounds. Rojak, toast and ice-cream.

It's not weird at all and after a few bites, it became rather addictive. I like rojak sauce, and this had so much of that sweet salty savoury rojak sauce all over it with crunchy peanuts and all, and the toast was so crisp on its outer skin, it was like replacement of the crunchy 'youtiao' (fried dough fritters) minus the oily feeling. Add ice-cream to this concoction and voila, it became a dessert!

We kept on checking with the staff it this was half portion. It was affirmative. I cannot imagine how one could finish the mammoth of a full portion!

To end, we had coffee. As with previous, we get a kick of seeing printed image on the milk foam. Just ask Kenny on how to get this done so that you can surprise your loved ones.

JC with her printed image

Dinner with Darren, Jeff and JC. Missing Gilbert.

Thank you Fiona and Chef Shahnaaz, Beasts & Butterflies and kitchen team for the delicious meal. Not forgetting Kenny, who came by to assist when we had questions about the coffee printing.
