[Tasting] TEN Sushi by Marusaya ( TEN Sushi & Bar ) @ 60 Robertson Quay ( The Quayside )

TEN Sushi by Marusaya (or also known as TEN Sushi & Bar) is located at Quayside, Singapore’s most sophisticated riverfront restaurant and bar community. Was invited for a tasting on a Friday night, and boy, it was buzzing! Hence, do make your reservations early.

Liked that the restaurant made it super easy to order for the first-timers. For example, there is a huge placard introducing the bestsellers, and on first page of the menu, are its signature dishes.

TEN Sushi is a casual sushi restaurant by Marusaya specialising in premium sushi with majority of its ingredients flown in from Japan. Helmed by Chef Hirai, TEN Sushi offers quality sushi and contemporary Japanese cuisine. Marusaya in turn, is a specialist in natural dashi based cuisine.

We began our meal with fresh oysters from Sakoshi Bay, Hyogo. Thick, fleshy, briny and creamy. Satisfaction guaranteed! These oysters were presented beautifully and came with toppings of either ikura or tobiko. Either way, the oysters were already good to be eaten on its own. The addition of tobiko gave it some crunchiness to contrast against the soft flesh, while ikura added continuous bursts of umami! A glass of wine/sake will complete the picture.

Sakoshi Bay Oyster 坂越湾牡蠣

The oyster fan in me was feeling satisfied after slurping up two of these good sized Sakoshi Bay oysters.

Next up, was the unagi roll. One could order the small roll (4 pieces) or the regular (8 pieces). The eel roll was lightly glazed over with a special teriyaki sauce.

The unagi sushi is actually a pretty big piece, hence each person could do two pieces to allow some space to try other sushi. The unagi was soft and tender with some savoury sweetness from the teriyaki glaze. Sushi rice was nicely vinegared.

Another bestseller at TEN Sushi is the TEN Assorted Sashimi Deluxe. The sashimi set comprises of maguro (tuna), sake (salmon), hotate (scallop), ika (squid), amaebi (sweet prawns) and seasonal fish (2 kinds).

For the tasting, there were a few upgrades in the sashimi and we got some sea urchin and instead of a 5 pieces of sweet prawns, there was one large one (botan ebi?) in its stead. I only had the chance to try the some of the sea urchin, scallops, hamachi, salmon and squid. The tuna belly was snapped up pretty quickly.

For the meat lovers, you'll enjoy the A4 Wagyu Aburi Sushi. The raw slices of the wagyu looked enticing enough but we exercised patience as the beef needed to be seared, then glazed before we could indulge.

Thought that the small mound of rice underneath the seared beef slice looked kinda cute. The beef was of a nice chew and had a good oily mouthfeel. While not melt-in-your-mouth, the flavour was good and mild. Enjoyable.

For more makisushi, there's Aburi Salmon Avocado Roll. Seared salmon layered ontop of sushi rice, with a piece of chunky creamy avocado, and topped with sliced onions, some green onions and tobiko. Mayo at the side.

If you're feeling adventurous, one could also leave it to the expert hands of Chef Hirai for the Omakase Sushi platter. There's a 12-piece sushi omakase as well as Sushi Box for 12 or 24 pieces.

The sushi box was beautiful. Nicely arranged and easy to take photo! I can see that there's uni, toro, hotate, kanpachi/hamachi, squid, octopus, salmon, tuna, ebi and unagi and negitoro maki in the box.

To end, I'd recommend the Dashi Miso Soup. Well balanced savoury miso soup with mild sweetness. So comforting!

[Tasting] Roots Mediterranean @ 2 Greenwood Avenue

Roots is a restaurant that specialises in wholesome, authentic and delectable Mediterranean fare. One could find a combination of Italian, Spanish, Greek and Levantine cuisine creations. Levantine cuisine is the traditional cuisine of the Levant, known in Arabic as the Bilad al-Sham and Mashriq, which covers a large area of the Eastern Mediterranean. Perhaps you are familiar with mezze such as tabbouleh, hummus and baba ghanoush? Indeed.

Was invited by Jennifer for a tasting at Roots, located at the space formerly occupied by Donna Carmela Italian Restaurant at Greenwood Avenue.

To start, we have a plethora of tapas, mezze and antipasti. We were served with foccacia, hummus, tzatziki, tirokafteri and melinzano salata. The melinzano salata was instantly distinct with its ultra smokiness, and textures of the diced eggplants with lemon and EVOO.

First time having tirokafteri and immediately, one would recognize the flavours of yoghurt, cheese and a slow spicy kick of the chili. This became a favourite as with the refreshing tzatziki.

Next, we enjoyed some Spanish tapas. Croquettas, Tortillas De Papas Y Queso Fundido, Gambas Ajillo and Octopus Gallego. The croquettes were breaded and fried to a golden crisp. Inside was soft with ham & cheese. Mild flavours and good on its own without having to dip on any other thing. The Spanish omelette was also lightly seasoned and loved the warm egg but not so of the chunky potatoes.

The gambas is of a healthier version (not oily) and the tomato sauce was really good with the bread. Prawns were cooked lightly and texture was bouncy yet not overly firm. The octopus was tender yet retained a firm chew.

The tapas was enjoyed with a glass of sangria. If you prefer wine, the good news is that Roots offers reasonably priced bottles. Starting from $29 to $59 per bottle.

Italian wines

The last starter was of Italian origin; the Gratinated Mussels. Mussels topped with breadcrumbs, well seasoned and baked. The mussels flesh was thin and was interesting when combined with the baked breadcrumbs. Super love the tasty intense cherry tomatoes.

For main courses, one could try the currently trendy pizza integlia alla romana, which is a rectangular shaped pizza which looked like bread due to its 48 hours long fermentation that resulted in a thicker yet airy dough. Prices start from $18 for a 25cm pizza, $26 for 50cm and $50 for 1m.

I liked the pineapple pizza which is a Red pizza with tomato base sauce, mozarella cheese, turkey ham and chunky sweet pineapples. Tasty with juicy pineapple chunks.

And of course, we wouldn't miss the chance to try their pasta and risotto. The bolognese was comforting and with a balanced taste.

I preferred the simple "It's Not Alfredo!" (*chuckled* at the name), served with the 24 month aged
Parmigiano Reggiano emulsioned cream. Smooth strands of noodles (reminiscent of mee pok) and cheese flecks/cream that melted away.

Good risotto was found in the form of Risotto Porcini Mushrooms. Earthy flavours, creamy and strongly seasoned. These delightful grains are recommended for sharing.

If you want lasagne but do not want the pasta, there's Moussaka. Potatoes, layered with eggplants, minced meat and bechamel sauce and baked.

For those that have another stomach for dessert, read on. We tried the Rootless Dessert Platter, a three-tiered dessert platter meant for 2 pax. There's mini desserts of tiramisu, creama catalana, sorbet tarts, fruits, walnuts, raspberry cheesecakes, double chocolate opera cake, honey and truffle and candied apricots.

Roots Mediterranean also offers reasonably priced Weekend Brunch on every Sunday from 11am to 4pm where adults pay just $49.90+ (soft drinks included) or $69.90+ (house wines) for unlimited portions of selected pastas, salads, pizza, meats and fish and more.
